Beehive Creamery, an artisanal cheesemaker out of Utah, specializes in unique twists on cheddar styles, and Barely Buzzed is no exception! Made with pasteurized Jersey milk, it’s a full-bodied, cheddar-style cheese that’s hand rubbed with roasted coffee and lavender before being aged for about eight months. Barely Buzzed has a nutty flavor and smooth texture with notes of butterscotch and caramel, which become more pronounced as you near the rind. Pair with full-bodied wines, ports, ales, stouts, and ciders. A wedge also makes a terrific addition to cheese boards. Serve alongside toasted nuts, charcuterie, berries, and chocolate.
