Roasted sweet potatoes can be added to salads or served as a healthy, nutritious side dish for any meal.  You'll just need about a pound of sweet potatoes, chopped into 1" cubes, olive oil, and salt & pepper to taste:

1. Preheat oven to 450º. On a large baking sheet, toss sweet potatoes with oil and season with salt and pepper.
2. Roast until tender, tossing halfway through, 25 to 30 minutes.
