Try our twist on a German-style potato salad! We skipped the mayo and tossed Tasteful Selections potatoes with fresh herbs in a tangy dressing. Enjoy it warm or chilled, it's a super versatile side dish that can include all sorts of mix-ins - from crispy bacon and seasoned German sausages to caramelized onions and fresh asparagus.
Herby Summer Potato Salad
What you need
- 2/3 cup apple cider vinegar
- 3/4 cup vegetable broth
- 2 tbsp. sugar
- 2 tbsp. Dijon mustard
- 1/2 tsp. cornstarch
- 1 package Tasteful Selections Potatoes (either Ruby Red or Honey Gold)
- 1 tbsp. fresh rosemary, minced finely
- 1 tbsp. fresh parsley, minced finely
- 3 scallions separated, whites minced finely, greens cut into rounds for garnish
- 1 tsp. kosher salt
- 1 1/2 tsp. ground pepper
In a small saucepan, whisk apple cider vinegar, vegetable broth, sugar, and Dijon together. Bring to a simmer over medium-high heat. Let simmer for 5-10 minutes, or until mixture has reduced by a third.
Add the cornstarch to a tablespoon of cold water and stir briskly until combined. Add to sauce and whisk until thickened slightly. Remove from heat and set aside.
Microwave potatoes as directed, but reduce time to 6 minutes. Remove from the microwave and bag, and let cool enough to handle.
Cut potatoes into quarters, and place them in a large bowl. Add salt, pepper, herbs, and scallion whites. Pour sauce over and toss lightly to combine. Top with scallion greens. Serve warm, room temperature, or chilled.
