Asparagus is one of those vegetables that some associate with being unsavory. We assume because it’s green, but we want to change that mindset! And since it’s officially asparagus season, this is the time to take advantage of the vibrant green vegetable. For a quick side dish, blanch them for just a few minutes for the perfect crunch, then toss with lemon zest, olive oil, and Parmesan cheese. Or better yet, during your next cookout throw them on the grill until they’re charred and tender.
