Recipe: Compound Butter

Compound butter is an easy and impressive little trick to kick your dinner up a notch. 

It’s simply a combination of softened butter and aromatic flavoring ingredients. They can be either savory (like garlic herb butter) or sweet (like cherry almond or honey butter). You can use it to top vegetables, pasta, meat, or just slather it on a piece of toast. It’s easy to make and the end result is impressive. 

The possible combinations are endless! Here’s an idea for garlic herb butter to get started: 

Ingredients

2 sticks Unsalted Butter
1 tbsp. Heavy Whipping Cream
1-2 garlic cloves (to taste), smashed and finely chopped 
1 tbsp. chopped thyme 
1 tbsp. chopped sage
1 pinch each salt (use sea salt if desired) and pepper

Instructions

1. In a small bowl, combine softened butter and blend all ingredients until smooth.
2. Spread the mixture on to wax paper, forming it into a log.
3. Tightly roll the wax paper, twisting at both ends (should look like a sausage).
4. Refrigerate for several hours before serving.

 

This tarragon butter is great for corn on the cob!

Makes enough for 4 ears of grilled corn.

4 Tbsp. chopped fresh tarragon  
1 pinch each salt (use sea salt if desired) and pepper

Instructions

1. In a small bowl, combine softened butter and blend all ingredients until smooth.
2. Spread the mixture on to wax paper, forming it into a log.
3. Tightly roll the wax paper, twisting at both ends (should look like a sausage).
4. Refrigerate for several hours before spreading over hot grilled corn on the cob.
