Recipe: Grill-Ready Campfire Meals
Whether savoring meat and potatoes, a flavorful salmon fillet, or indulging in a hearty vegetable medley, foil pack meals can bring a lot of comfort to any outdoor experience, providing a delicious and hassle-free way to have great meals no matter where you end up this summer.
Ingredients:
- 1 package sausage, cut into 1/2" rounds
- 3-5 yellow potatoes, quartered
- 1-2 corn, cut into 1-2" cob pieces
- Sweet peppers, halved and divided
- 4 tablespoons butter
- 4 teaspoons Cajun seasoning
- Salt and pepper, to taste
Instructions:
- Preheat your grill to high heat.
- Slice your sausage and veggies into bite-sized pieces that are roughly the same size.
- Divide your filling into 4 portions, placing each portion in the center of a piece of foil.
- Heat butter with your seasonings and pour a little onto each portion; mix gently. Fold the sides of the foil over your filling, covering completely and sealing the packets closed.
- Put the foil packets on the grill or campfire coals and cook for about 12-15 minutes until cooked through. Carefully open one packet and test potatoes--when a fork goes through easily, they're done!
