Follow this simple step-by-step guide on how to cook a farm fresh frittata with bacon, cheese and fresh spinach. Thank you to our loyal customer Rebecca J. for submitting this delicious dish!
12 oz. Daily’s cherry applewood smoked bacon
10 Smith Brothers Farms large organic eggs
2/3 cup Smith Brothers Farms organic whole milk
3/4 cup Tillamook shredded cheddar cheese
3/4 cup crumbled feta cheese
2 or more cups fresh spinach
chopped scallions, sliced tomatoes, and sour cream to garnish
Cook bacon in cast iron skillet. Remove and let cool, then break/cut into pieces. Wilt spinach in a skillet.
In a large bowl, whisk eggs with milk. Stir in feta cheese, 1/2 cup cheddar cheese, cooked bacon, and spinach. Pour most of the bacon grease out of skillet and scrape up any bacon pieces from the bottom. Pour in your egg mixture. Cover skillet and cook on medium low heat on stovetop for about 25 minutes until egg puffs and is cooked through.
Sprinkle 1/4 cup shredded cheese on top and broil uncovered until cheese melts. Garnish with fresh tomatoes, scallions and sour cream. Enjoy!
