Totchos: Pure PNW Comfort Food

Born right here in the Pacific Northwest, Totchos are our kind of comfort food: crispy tots loaded like nachos with cheese, sour cream, and all your favorite toppings. Invented in Portland (of course!), this quirky twist on a classic snack captures everything we love about the region’s food scene: inventive, cozy, and just a little over the top.
Totchos are the perfect crowd-pleaser for game days, movie nights, or easy weekend dinners. Pile them high, pass around some forks, and dig in — no fancy presentation required.
Loaded Totchos Recipe
Serves: 4–6
Prep Time: 10 minutes
Cook Time: 25 minutes
Ingredients:
- 1 bag (32 oz) Alexia Seasoned Crispy Potato Puffs
- 1 cup shredded cheese (anything goes, but we like Tillamook Triple Cheddar or Mexican 4 Cheese Blends!)
- ½ cup Smith Brothers sour cream
- ½ cup cooked bacon, crumbled (we recommend local standout Carlton Farms!)
- ½ cup diced tomatoes or prepared salsa
- ¼ cup sliced green onions
- Optional toppings: sliced jalapeño, guacamole, or diced avocado
- Salt and pepper to taste
Instructions:
- Preheat oven to 425°F.
- Spread tots in a single layer on a baking sheet and bake according to package directions, until golden and crispy.
- Sprinkle the hot tots with shredded cheese and return to the oven for 3–5 minutes, just until melted and bubbly.
- Transfer the cheesy tots to a serving dish and top with bacon, tomatoes, green onions, and jalapeños.
- Dollop with Smith Brothers Farms sour cream and season with a little salt and pepper.
- Serve immediately: Totchos are best when the cheese is melty and the tots are still crisp!
Make It Your Own
Breakfast version: Add scrambled Smith Brothers eggs and drizzle with hollandaise.
Veggie lovers: Use black beans, roasted corn, and avocado for a fresh take.
