Eggs Royale with Smith Brothers Eggs & Salmon
Eggs Royale takes all the indulgence of classic Eggs Benedict to the next level by swapping the ham for silky smoked salmon, for an elevated classics that feels elegant and fresh. With Smith Brothers eggs at the center, the rich yolks give the hollandaise a golden glow that makes this brunch favorite truly irresistible.

Ingredients:
2 English muffins, halved and toasted
4 Smith Brothers eggs
4 oz smoked salmon
½ cup Smith Brothers Farms unsalted butter
2 Smith Brothers egg yolks
1 Tbsp lemon juice
Salt and pepper
Instructions:
- Start with our Easy 5-minute Blender Hollandaise
- Set hollandaise sauce aside, but keep it warm until your eggs are ready. (A thermos cup is great for this!)
- Poach eggs: Gently drop eggs one at a time into simmering water with a splash of vinegar. Let cook in the water about 3–4 minutes.
- Layer muffin halves with smoked salmon, then a poached egg.
- Spoon warm hollandaise over top and sprinkle with black pepper or chopped chives.
